6 Superfoods to Celebrate Spring

Spring abounds with fresh foods. Greens and juicy strawberries crowd farmers markets, but they’re only two of the tasty seasonal superfoods you’ll find in Spring markets. Check out these six tasty, healthy, power-packed foods of the season:


Bored with your food? Try artichokes. The cynarin in them boosts taste bud receptors. That’s not all artichokes have to offer, though. They also give you inulin, a prebiotic that helps build beneficial gut bacteria.


In addition to pungent flavor, garlic adds vitamin C, B6, manganese, and antioxidants to your diet. Garlic adds flavor to meats, sauces, and salad dressings—or sauté some with the next superfood: spinach.


Spinach is a true superfood. You may know it’s a great source of vitamin C and folate, but it’s also packed with betaine, which gives you an exercise performance boost. Take another look at spinach because it’s also a good source of lutein and zeaxanthin for healthy eyes. Spinach is great in salads, lightly steamed or sautéed, or in a green smoothie.


Deep red and sweet, strawberries are full of vitamin C, antioxidants, and fiber. They’re a good source of manganese and potassium too. Strawberries are great for dessert, popped into smoothies, and tossed in a salad with spinach.


Radishes grow quickly in the cool of spring. They add vitamin C as well as a peppery crunch to salads. The leaves have even more vitamin C and are tasty in stir fries or pesto. Mix radishes and broccoli and you boost the benefits of broccoli.


These green spears are packed with vitamin K, to help with bone health, and vitamin A, for a stronger immune system. Eat asparagus steamed or grilled and you’re adding folate and protein to your diet too.


Peas are tender and tasty in the spring. These little green gems add vitamin C and mood-boosting thiamin. Peas make a simple side vegetable or can be tossed into pasta or rice salads.
